The Cake cost $2500.00. The design was exquisite. The intricate string work, cornelli lace work and flowers were breathtaking. I couldn't wait to have my piece of wedding cake.
I sat in very close proximity to the cake for almost 3 hours. It was so beautiful, I couldn't take my eyes off it. During the cocktails, the bridal party introduction, the first dance, speeches, and dinner I sat there waiting patiently, salivating the whole time, wishing like hell that they would hurry up and cut the cake.
I was beginning to get highly peeved when finally it was time to cut that beautiful cake. After 25 minutes of the bride and groom's customary pictures of cutting the cake and feeding one another, the cake was being cut for service.
"I better not get a little piece of cake" I thought, while I waited yet another 10 minutes for service to get to my table. "Oh my God!" I got a nice big piece of cake" was my first thought when the server placed it in front of me. "I am going to tear this cake up" was my second thought.
I sat there pondering for about 15 seconds planning my attack. Because it was a 3 layer chocolate cake with mouse and butter cream filling I had to plan a strategic attack as I wanted to have a bite of all to allow the flavors to meld in my mouth permitting me to fully appreciate this beautiful culinary creation. I wanted to savor every Euphoric moment I would have with my piece of artistry.
Embarrassingly, I put a big forkful of cake into my mouth, closed my eyes and waited for euphoria. After two bites I realized that something was horribly wrong. I immediately stopped chewing. " Surely you jest" I thought to myself. This has to be some sort of of a cruel joke. Although I have had some so -so cakes in my day this was absolutely the worst I had ever tasted. I discreetly used my napkin to discard the cake in my mouth.
I sat there for a moment in complete shock trying to collect myself from the disappointment that I felt. How could they, the bride and groom, do this to me. I was personally offended. As I began to regain my composure I noticed the others. The guests who had the same look of disappointment on their faces as well. A friend sitting next to me said "it wasn't that bad". I told her the piece that I just spit out was horrible and we must not be eating the same cake.
She insinuated that I was a cake snob because I myself was a baker. I explained to her that although a baker I was not a cake no snob. Good cake is good cake and I appreciate all flavors and types made by anyone so if anything I am a cake connoisseur.
Unfortunately, my disappointment got the best of me and it began to affect my attitude in a bad way and I knew it was time to leave. I said my goodbyes and left the reception heading straight to the nearest Central Market to get a piece of St. Anthony's Mini Chocolate Mousse Cake.
When I got to the bakery counter I told the clerk to give me a spoon or fork. I stood there for 5 minutes devouring the cake, it was almost orgasmic. The clerk and customers looked at me as if I were crazy. After finishing the scrumptious morsel I once again composed myself ordered one to go and went to the checkout.
On my drive home I thought of the bride and groom and wondered if they were as disappointed as me. Surely they had had a taste testing with the baker that they chose. Were they so wrapped up in the planning that they forgot. Could they have been so impressed with the design skills of the baker that they assumed the cake would be good.
I absolutely love a good piece of cake but there is something about "wedding cake" that insinuates perfection. Good cake is imperative at a wedding. The guest expect it. Because a cake is beautifully decorated and cost a fortune does not negate taste.
The wedding was like a fairytale, the reception was beautiful but "The Cake Sucked"!!
That was 2 years ago. I was so put off by that cake fiasco and others that followed that I went to my local community college, "El Centro Community College", http://www.elcentrocollege.edu/ which has a most extensive culinary program.
Already mastering baking I enrolled in "Cake Decorating I" and "Cake Decorating II" I completed the courses with an A. Although I have not mastered all the technique's that I learned in my classes. I am still perfecting my craft and am overwhelemed with joy at the prospect of making a living doing something that I really love.
I produced my first wedding cake for a friend this past August. The cake was beautiful when it arrived at the venue. Because butter cream a outdoor wedding in August in the state of Texas don't mix the pictures are not the best. However, the cake was absolutely delicious. The cake got more complements than the bride.
The wedding was really nice, the reception was spectacular but this cake didn't suck!

Ingeneral, being from Europe, I do not get the obsession with those humongous cakes that are made of crap.
